Our quick and easy Chicken Spring Roll Bowl <\/strong>is the perfect dinner option that is packed with flavor and so simple to pull together! Made with real, simple ingredients and a homemade peanut sauce that really makes the dish. Everyone is going to love making this easy spring roll bowl!<\/p>\n\n\n\n There are countless busy weeknights at our house, enter this delicious chicken spring roll bowl! There is always a pack of rice noodles in the pantry for just this occasion. Just throw some chicken breasts on the grill or pick-up a rotisserie chicken at the grocery store and this meal will be ready to serve in about 20 minutes! Plus, the easy peanut sauce can be made ahead of time and stored in the fridge until you are ready to serve. Cook the rice noodles to al dente according to the package directions and then drain under cool water.<\/p>\n<\/div><\/div>\n\n\n\n Place the peanut butter, maple syrup, sesame oil, soy sauce, and one tablespoon of water in a small bowl. Whisk to fully combine. Then add one more tablespoon of water and whisk again. Adjust the consistency to your personal preference.<\/p>\n\n\n\n We love to toss our chicken breasts on the grill (for easy clean-up), but you can also make air fryer chicken breasts<\/a>.<\/p>\n\n\n\n Now assemble the spring roll bowl any way you want! We start with a rice noodle base, cubed chicken, fresh mango, avocado, carrots, green onions, drizzle on the peanut sauce and some chopped cilantro.<\/p>\n\n\n\n The pieces of this recipe can easily be prepped ahead of time. Just store the cooked chicken and noodles in separate containers to easily heat up when ready. Place the peanut sauce in an airtight container in the fridge. And chop all the fresh ingredients (except the avocado) and store in another container.
